Easter Feaster
Hey Peeps!
Today was the first day of British summer (really!?? REALLY?).
Despite the chill outside I felt like I needed to find some little pieces of joy to counter balance the cold snap.
As the occasion called for it I decided to cook up a summer inspired quiche. It’s my first one (EVER!) so I am a little in awe of it. I never thought I’d be someone to make quiche as I am not a culinary queen in any respect, however I was pretty proud of this beauty.
Filling included roasted courgettes, sweet potato, caramelised onion, spinach, red peppers and goats cheese, not to mention some homemade pastry (using my nan’s top secret family recipe!). O la la! Most important ingredient? Some family to share it with. Perfect.
