Guilt-Free Fast Food? Hello Falafel
Leaving Soho a little worse for wear late one Saturday night on a quest to find something, ANYTHING to eat I stumbled upon the holy grail of all drunken foods: Falafel. And, having stuffed my face with a tasty snack I didn’t later regret, I thought I’d give it a go.
Some time on and baked falafel still ranks top as one of my favourite, guilt-free fast foods. So here is a lil recipe I thought you might enjoy!
THE RECIPE
Useful Info This Recipe Is: VegetarianIngredients (Serves 4)
For the Falafel…
400g Chickpeas
400g Mixed Beans
1 heaped tbsp. Wholegrain flour
1 tbsp. Harissa
4 Spring Onions, roughly chopped
1 Handful Fresh Coriander, roughly chopped
1 tsp Lemon Zest
1 tsp Paprika
Salt and Pepper to taste
Olive Oil
For the Filling…
8 Tortilla wraps
1/2 Red Pepper
1/2 Yellow Pepper
1 Handful Mixed Salad
1/2 Ripe Avocado
100g Feta
100g Humous
Chilli Sauce to taste (I like Encona’s Chilli and Garlic sauce)
Method
For the Falafel…
- Preheat the oven to 200 Degrees Celsius / Gas Mark 6.
- Drain the chickpeas and mixed beans and whizz in a processor. I like to leave this a little chunky rather than completely pureed.
- Add the flour, harissa, spring onions, coriander, lemon zest, paprika, salt and pepper and mix.
- Using wet hands form the mixture in to little patties and place on an oiled baking tray.
- Drizzle with olive oil and bake for 15-20 minutes, or until the falafel balls are crispy on the outside and soft on the inside.
- A few minute before the falafel is ready to serve place your tortilla wraps on the bottom shelf of the oven.
For the Filling…
- Whilst the falafel is baking prepare your filling: slice the avocado and pepper and get out your sauces (I like to get a bit of a production line ready to go).
- Once out of the oven add fill the tortillas with the falafel, peppers, salad, avocado, feta, humus and chilli sauce.
- Wrap, serve and ENJOY 🙂
