Super Easy Party Canapés!
For me this time of year is Birthday-intensive, which gets me in the mood for making mini food.
Here are a couple of my favourite, super easy party treats:
THE RECIPE: Mini Mushroom Pies
Useful Info This Recipe Is: VegetarianIngredients (Makes 20)
- 500G Ready Made Puff Pastry
- Handful Spinach
- 2 Portobello Mushrooms
- 50-100g Stilton
- Olive Oil
- 1 Egg
Method
- Preheat the oven to 190 degrees Celsius / gas mark 5.
- Fry the mushrooms in a little olive oil, then cut in to half inch chunks.
- Lightly sauté the spinach and set aside.
- Roll the pastry flat and cut in to 4 inch circles.
- Add a helping of spinach, a chunk of mushroom and a piece of cheese.
- Pinch the pastry around the filling, sealing at the top.
- Brush with egg.
- Bake the mini pies until golden and crispy, and then serve.
THE RECIPE: Cheesy Bites
Useful Info This Recipe Is: VegetarianIngredients (Makes 20)
- 1 Ciabatta Roll
- 100g Brie
- ½ Red Pepper
- 1 tbsp. Apricot Jam
Method
- Cut the Ciabatta in to 1 inch squares, drizzle with olive oil and grill.
- Chop the Brie and lay on top of the grilled Ciabatta pieces, then place back under the grill.
- Thinly slice the red pepper and fry in the apricot jam.
- Drizzle the jam over the cheese and top with a piece of pepper.
- Enjoy hot or cold.
