Christmas Cake Pops

Merry Christmas! Season’s Greetings!

I hope everyone is enjoying much festive fun, mulled wine and turkey aplenty! To help continue the joyful celebrations, this week’s recipe is a suggestion for Christmas leftovers of the sugary variety. These snowball inspired cake pops use the controversial Christmas cake as their basis, which I always feel is the Marmite of the cake world, and mix it up with a whole lot of chocolate. They’re really simple to make, allowing for some fuss-free Boxing Day ‘baking’ or a New Year’s Eve party sweet treat.

Ingredients (Makes 10)

  • 400g Christmas Cake
  • 200g Dark Chocolate
  • 1 Orange, Zest
  • Vanilla Essence
  • 300g White Chocolate
  • Blue Glimmer Sugar (or other decorations as preferred)
  • Lollipop Sticks

Method

  1. Crumble up the cake in a mixing bowl by hand. IMG_2097

  3. Melt the dark chocolate and add a splash of vanilla essence, then work in to the cake and orange mixture by hand.IMG_2099
  4. Roll the mixture in to balls about twice the size of a truffle and place on a baking parchment lined dinner plate.IMG_2100
  5. Leave the balls to set in the fridge for half an hour.
  6. Melt the white chocolate and dip the lollipop sticks about 2 inches in, then push the sticks in to the balls.IMG_2101
  7. Leave the balls to set in the fridge for a further 5 minutes.
  8. Dip each ball in to the white chocolate until fully covered and spin to get rid of any drips.
  9. Sprinkle with blue glimmer sugar (gives an added crunch) or leave plain, or decorate as desired.
  10. Place the pops in to a cake pop holder and leave to set for half an hour before tucking in.IMG_2104

And there you have it; some re-purposed cakey treats which are so chocolaty they may even convert the non-Christmas cake eaters.

Bonus tip: If you don’t have a cake pop stand, don’t panic! You can poke holes in the bottom of an egg carton, a tin foil tray, or even stand the cake pops in an upturned colander.
