Super Easy Party Canapés!

For me this time of year is Birthday-intensive, which gets me in the mood for making mini food.

Here are a couple of my favourite, super easy party treats:

THE RECIPE: Mini Mushroom Pies

Vegetarian

Ingredients (Makes 20)

  • 500G Ready Made Puff Pastry
  • Handful Spinach
  • 2 Portobello Mushrooms
  • 50-100g Stilton
  • Olive Oil
  • 1 Egg

Method

  1. Preheat the oven to 190 degrees Celsius / gas mark 5.
  2. Fry the mushrooms in a little olive oil, then cut in to half inch chunks.IMG_2562
  3. Lightly sauté the spinach and set aside.
  4. Roll the pastry flat and cut in to 4 inch circles.
  5. Add a helping of spinach, a chunk of mushroom and a piece of cheese.IMG_2563
  6. Pinch the pastry around the filling, sealing at the top.IMG_2564
  7. Brush with egg.
  8. Bake the mini pies until golden and crispy, and then serve.IMG_2565

 

THE RECIPE: Cheesy Bites

Vegetarian

Ingredients (Makes 20)

  • 1 Ciabatta Roll
  • 100g Brie
  • ½ Red Pepper
  • 1 tbsp. Apricot Jam

Method

  1. Cut the Ciabatta in to 1 inch squares, drizzle with olive oil and grill.IMG_2566
  2. Chop the Brie and lay on top of the grilled Ciabatta pieces, then place back under the grill.
  3. Thinly slice the red pepper and fry in the apricot jam.
  4. Drizzle the jam over the cheese and top with a piece of pepper.
